Cinco de Mayo ("The Fifth of May" in Spanish <http://en.wikipedia.org/wiki/Spanish_language>) is a national holiday in Mexico <http://en.wikipedia.org/wiki/Mexico> which is also widely celebrated in the United States <http://en.wikipedia.org/wiki/United_States>. It commemorates the victory of Mexican forces led by General Ignacio Zaragoza <http://en.wikipedia.org/wiki/Ignacio_Zaragoza> over the French <http://en.wikipedia.org/wiki/France> occupational forces in the Battle of Puebla <http://en.wikipedia.org/wiki/Battle_of_Puebla> on May 5 <http://en.wikipedia.org/wiki/May_5>, 1862 <http://en.wikipedia.org/wiki/1862>.
MoQuila breaks the standard thinking about Mexican food and is defined by fresh ingredients, meticulously created dishes, homemade tortillas, tamales, mole and salsas, sublime marinades, fresh guacamole mashed tableside, exceptional flavors and 250 distinctive tequilas.
MoQuila's culinary vision is a result of Chef Max Espinosa's hard work and dedication to authentic Mexican cuisine using the finest and freshest ingredients with cooking techniques including slow roasting, marinating and sautéing.
